Simple, Delicious Ratatouille

A great vegetarian dish – ratatouille. Start by cooking eggplant and summer squash – set them aside. Next, cook onions, bell peppers and garlic, and stir in tomatoes. Toss the eggplant and squash back into the pan and top with fresh basil. Serve as-is, or add some hearty grilled tri-tip for an extra touch. #Recipe
