Squash and Saffron Risotto

Prepare the squash by peeling and de-seeding it. Sautee onion and squash in a Dutch oven. Add the rice and cook. Stir in wine and saffron and let simmer. Continuously add chicken or mushroom broth until the risotto is done. Add Parmesan and parsley. #Recipe
